RELEASE NO. 4

Water is used throughout the whisky making process, from steeping and mashing through to cooling and dilution. Over generations, many a tall tale has been told about whisky tasting like babbling brooks, spiritual waterfalls and liquid trickled down over the eons through mountain granite. However our water simply comes from the Thames – it possesses both high mineral content and microbiological purity.

 

Our water has a crucial impact on the properties of our long, high ester fermentations - and therefore also on the personality of our London single malt whisky.

 

This single cask has been reduced in strength to demonstrate the ability of dilution to unlock additional aromas and flavours and to present this single malt whisky with a new, hand-tailored balance.

NOSE: A balanced combination of pineapple chunks, mangoes and vibrant lemon sit alongside toasted cereals, vanilla buttercream and ginger.

 

PALATE: Juicy pineapple, apple and pear join vanilla pods, smooth custard and toasted oak, whilst cinnamon and ginger are dusted on top.

 

FINISH: Prolonged sweet fruitiness together with sympathetic cinnamon spice.

THE FOUR ELEMENTS- AIR
RELEASE NO. 3

England’s weather plays a hugely important role in the growth of our precious spring barley. The Jet Stream produces mild winters, wet springs and long, warm summer days – ideal for sowing, growth and harvesting. Meanwhile the Gulf Stream continually delivers warm water to the island resulting in air temperatures being a few degrees higher than they would be and therefore a longer growing season. 

 

The air has a crucial impact on the characteristics of our barley – and therefore also on the personality of our London single malt whisky.

 

This single cask has been selected because of its barley-forward profile. Our single farm barley possesses high-levels of both extractability and fermentability which allow for the creation of a wide array of complex aromas and flavours.

NOSE: Creamy toffee covered popcorn sits alongside crème caramel, whilst roasted barley and toasted cereals joins charred pineapple segments, shaved oak and baking spices.

 

PALATE: Rich and syrupy in texture with a combination of scorched lemon peels, cooking apples, peach melba alongside caramelised sugars and piquant cask spice.

 

FINISH: Long with candied peels and lasting ginger and cinnamon spice.

THE FOUR ELEMENTS - EARTH
RELEASE NO. 2

The second element of the Collection is ‘Earth’. Peat is the decomposed remains of grasses, rushes, moss and reeds that have been compressed over centuries in oxygen-starved, waterlogged bogs. Historically peat was a readily available fuel source and was utilised not only to kindle hearths, but also to fire distillery kilns. The locality of where peat has been extracted from the earth contributes different chemical characteristics to peated malt and consequently to peated whisky. 

 

This single cask has been selected to present the remarkable integration of Bimber’s spirit with the characterful, vegetal peat that we use to kiln our barley when crafting peated whiskies.

NOSE: A compote of orchard fruits is married together with wisps of in-land peat smoke. Golden syrup sits with gingerbread men whilst syrupy stone fruit joins asides of damp autumn leaves. 

 

PALATE: Sweet, tinned apricots are wrapped up in warming touches of wood smoke, whilst barley sugars and toasted oak is joined by ginger and cinnamon spice.

 

FINISH: Linger fruity sweetness with touches of persistent, but delicate smoke.

THE FOUR ELEMENTS - FIRE
RELEASE NO. 1

The first release of The Four Elements Collection is 'Fire' - flames and heat have a crucial impact on the dynamics and intensity of our casks – and therefore also on the personality of our London single malt whisky. 

This single cask has been selected to showcase the active but sympathetic interaction between Bimber’s fruit-forward, textural spirit with heavily charred American oak virgin casks.

NOSE: Orange peels, tinned peaches and spit-roasted pineapple join marzipan and roasted nuts whilst cinnamon and ginger provide liveliness. 

 

PALATE: Gently spiced tinned fruit – peach and apricot - sit together with vanilla cream, oven-baked pastries and milk chocolate alongside fizzing cask spices. 

 

FINISH: Dry earthy spicing with shaved chocolate and fading stone fruit
