Bimber Distillery was founded by whisky lovers, with a mission to produce high-quality single malt whisky with character, using traditional methods that are rarely seen today.
The journey begins at our single farm, where 100% of our barley is grown. It is then traditionally floor malted, hand-mashed and fermented slowly for seven days in our wooden washbacks that were hand-made at our own cooperage. We use direct fire to heat our small copper pot stills, and mature our spirit in hand-selected casks. Finally, our whisky is bottled onsite at our distillery.
Our hand-crafted approach to whisky production passionately combines traditional methods, expertise and an absolute commitment to quality.
Bimber’s first casks were laid down on the 26th May 2016 and we released our inaugural single malt whisky (The First) three years later in September of 2019 – the limited release of 1,000 hand numbered bottles sold out in 3 hours. Bimber will be releasing a wide range of new single malt whiskies – all with our trademark accessible, fruit forward character – all handcrafted with passion.

THE WITCH CASK
This Halloween, The Witch Cask awakens - an exceptional single cask release born from our handcrafted peated spirit and fully matured in a Pedro Ximénez sherry cask. To this day, no one knows whether its alluring aroma is the work of skilled distillers - or something far more mysterious
that stirs after dark.
In the quieter hours within London’s west, where the River Brent murmurs secrets through Acton, Bimber Distillery stands as both the birthplace and heart of The Witch Cask. Locals speak in hushed tones of uncanny happenings: barrels moving on their own, flickers in the copper stills’ glow. A presence lingers like the echo of whispered spells.

THE WITCH'S NOTES:
Nose
Dark leather and rich espresso rise like a spell, mingling with bitter chocolate and toasted walnuts. Ripe plums with sharp orange zest are laced with anise and a hint of bonfire smoke.
Palate
Sweet smoke leads, followed by honeyed lemon lozenges, salted caramel, fresh ginger, and anise. Wood spice crackles beneath, with a fleeting hint of something medicinal.
Finish
Smoky, lingering, with a sweet, anise-kissed whisper that clings long past midnight.
