Bimber Distillery was founded by whisky lovers, with a mission to produce high-quality single malt whisky with character, using traditional methods that are rarely seen today.
The journey begins at our single farm, where 100% of our barley is grown. It is then traditionally floor malted, hand-mashed and fermented slowly for seven days in our wooden washbacks that were hand-made at our own cooperage. We use direct fire to heat our small copper pot stills, and mature our spirit in hand-selected casks. Finally, our whisky is bottled onsite at our distillery.
Our hand-crafted approach to whisky production passionately combines traditional methods, expertise and an absolute commitment to quality.
Bimber’s first casks were laid down on the 26th May 2016 and we released our inaugural single malt whisky (The First) three years later in September of 2019 – the limited release of 1,000 hand numbered bottles sold out in 3 hours. Bimber will be releasing a wide range of new single malt whiskies – all with our trademark accessible, fruit forward character – all handcrafted with passion.
We all possess a unique ability to share, preserve and build upon knowledge over time. It is a fundamental part of what makes us human. However, our creative abilities depend on learning from the work of others - the past can always teach us about the present.
Bimber is a distillery that takes the learnings of the past and adapts them to make the whisky of the future. We stand on the shoulders of the giants that came before us – those historical figures whose deeds have exerted significant impact on people’s lives and consciousness.
In celebration of International Women’s Day, we are proud to honour two remarkable women whose curiosity and ideas helped shape the world. Their spirit of discovery reflects the same care, creativity and craftsmanship that guide our whisky making today.
To mark the occasion, we are releasing two limited single cask whiskies inspired by these true pioneers. Each cask has been carefully matured and selected as part of our dedication to traditional craft whisky production.

APOGEE - CRAFTED FOR THE CONFIDENT

The Apogee range combines exceptional malt whiskies, carefully selected for their unique character and further refined through maturation in ex-Bimber casks. This additional maturation brings greater depth and complexity, allowing the whisky to develop a rich balance of flavour and
distinctive character.
