BIMBER DISTILLERY

OUR SINGLE MALT WHISKIES ARE MADE WITH DEDICATION AND PASSION. EVERY RELEASE IS A WORK OF CRAFTSMANSHIP AND VIRTOUSITY

Bimber Distillery was founded by whisky lovers, with a mission to produce high-quality single malt whisky with character, using traditional methods that are rarely seen today.

 

The journey begins at our single farm, where 100% of our barley is grown. It is then traditionally floor malted, hand-mashed and fermented slowly for seven days in our wooden washbacks that were hand-made at our own cooperage. We use direct fire to heat our small copper pot stills, and mature our spirit in hand-selected casks. Finally, our whisky is bottled onsite at our distillery. 

 

Our hand-crafted approach to whisky production passionately combines traditional methods, expertise and an absolute commitment to quality. 

Bimber’s first casks were laid down on the 26th May 2016 and we released our inaugural single malt whisky (The First) three years later in September of 2019 – the limited release of 1,000 hand numbered bottles sold out in 3 hours. Bimber will be releasing a wide range of new single malt whiskies – all with our trademark accessible, fruit forward character – all handcrafted with passion.

CRAFTED AS

A CELEBRATION OF LOVE

Celebrate the season of love with Bimber single malt whisky crafted as a tribute to love in all its forms- passion, patience, connection and time. Fully matured in a Pedro Ximénez sherry cask, this whisky has developed a luxurious profile of rich dried fruit, dark berry sweetness, and gentle oak spice.​ 

 

This exceptional expression tells a story beyond flavour. It represents the emotional side of whisky-making: the belief that craftsmanship is an act of care, and that the finest whisky comes from time, patience, and skill. Those same values shape the moments we share, the things we treasure, and the connections we celebrate.
