Bimber Distillery was founded by whisky lovers, with a mission to produce high-quality single malt whisky with character, using traditional methods that are rarely seen today.
The journey begins at our single farm, where 100% of our barley is grown. It is then traditionally floor malted, hand-mashed and fermented slowly for seven days in our wooden washbacks that were hand-made at our own cooperage. We use direct fire to heat our small copper pot stills, and mature our spirit in hand-selected casks. Finally, our whisky is bottled onsite at our distillery.
Our hand-crafted approach to whisky production passionately combines traditional methods, expertise and an absolute commitment to quality.
Bimber’s first casks were laid down on the 26th May 2016 and we released our inaugural single malt whisky (The First) three years later in September of 2019 – the limited release of 1,000 hand numbered bottles sold out in 3 hours. Bimber will be releasing a wide range of new single malt whiskies – all with our trademark accessible, fruit forward character – all handcrafted with passion.

Every year, we try to make Christmas feel a bit more special, and this year we’re excited to share our Santa's Edition 2025. It’s a lovingly festive single cask whisky, further matured in
a Pedro Ximénez Sherry Cask. This limited edition single malt is made for sharing every
magical moment of Christmas.

A BIMBER CHRISTMAS TALE
Twinkling lights reflected off oak barrels as the elves danced from cask to cask, sprinkling a little North Pole magic into every drop of the Santa’s Edition. soft snowflakes drifted down, dusting the distillery in a sparkling winter wonderland.
Santa joined our team at the tasting table. With a twinkle in his eye, he sampled the whisky straight from the cask, while the elves scribbled joyful notes and whispered festive secrets into every bottle. Laughter, cheer, and the rich aroma of sherry-cask whisky filled the air, creating a lovely release made for sharing and celebrating the most magical moments of Christmas!
