EVERY RELEASE IS A WORK OF CRAFTSMANSHIP AND VIRTUOSITY
Bimber Distillery was founded by whisky lovers, with a mission to produce high-quality single malt whisky with character, using traditional methods that are rarely seen today.
The journey begins at our single farm, where 100% of our barley is grown. It is then traditionally floor malted, hand-mashed and fermented slowly for seven days in our wooden washbacks that were hand-made at our own cooperage. We use direct fire to heat our small copper pot stills, and mature our spirit in hand-selected casks. Finally, our whisky is bottled onsite at our distillery.
Our hand-crafted approach to whisky production passionately combines traditional methods, expertise and an absolute commitment to quality.
Bimber’s first casks were laid down on the 26th May 2016 and we released our inaugural single malt whisky (The First) three years later in September of 2019 – the limited release of 1,000 hand numbered bottles sold out in 3 hours. Bimber will be releasing a wide range of new single malt whiskies – all with our trademark accessible, fruit forward character – all handcrafted with passion.
In 2019, the first batch of Re-charred Oak Casks became Bimber's second single malt whisky
release. It was warmly received by whisky enthusiasts and was named a Category Winner
at the World Whiskies Awards.
Today, we're proud to present Re-charred Oak Casks Batch No.2.
Limited to just 1,140 individually numbered bottles, this small batch release has been crafted from a vatting of our heavily re-charred American oak casks.
Carefully selected American oak casks were hand-charred by Bimber's on-site cooper to a Level #4 Char, often referred to as 'Alligator Char' for the distinctive cracked pattern it creates on the surface of the oak. This deep charring caramelises the natural wood sugars, bringing layers of rich sweetness, tropical fruit notes and a beautifully smooth character to our whisky. Every cask has been carefully selected before being married together in our hand-made oak vat before bottling.
To mark the launch of our Re-charred Oak Casks, every bottle purchased by 12 noon (UK time)
on Wednesday, 15 July will be automatically entered into The Lucky Order.
